Potato Leek Sunchoke Soup with Turmeric & Broccoli Sprouts

“Sunchokes, in particular, are packed with inulin, a fiber that is genuine gold for the good gut bacteria we want to nourish. These bacteria ingest the fiber and produce short chain fatty acids, which have beneficial effects throughout the body, including the suppression of unwanted inflammation! Broccoli sprouts are packed with sulforaphane, a powerful detoxification boosting and anti-inflammatory compound. If you can’t get your hands on broccoli sprouts, you can combine broccoli with mustard seed powder or radish to absorb the sulforaphane better.”

- 2 tablespoons olive oil
- 2 leeks, white and light green parts, chopped
- 1 teaspoon turmeric
- Pinch of black pepper
- 2 large russet potatoes, peeled and chopped
- 2 sunchokes, peeled and chopped
- 4 cups vegetable or any stock or water
- Salt
- 1 tablespoon regular or vegan butter
- 1 cup loosely packed broccoli sprouts
