Is it just me or does this time of year make you crave carrot cake? 

I’ve been dreaming of it as I fall asleep at night which is usually an indicator that I need to post a recipe for it soon. But with warm weather right around the corner, I'm not really in the mood to test cake at the moment. Besides, wouldn't you rather have something with similar flavors that's light and energizing, like these carrot cake bites? 😊 

Ever since I made this Turmeric Carrot Cake Smoothie, I've been obsessed with the combination. The base is made from a combo of almond flour, rolled oats, cashew butter, and of course, shredded carrot. For mix-ins, I like to add shredded coconut and raisins but feel free to mix things up with whatever dried fruit or nuts you like! 


  • 1 cup almond flour 
  • 1/2 cup oats 
  • 1/2 cup cashew butter 
  • 1/2 cup shredded carrot 
  • 1/2 cup shredded unsweetened coconut 
  • 1/4 cup raisins 
  • 1 teaspoon vanilla 
  • 1 teaspoon cinnamon 
  • 1/2 teaspoon ground ginger 
  • 1/4 teaspoon salt 
  • 1 scoop MegaFood® Daily Turmeric Nutrient Booster Powder™ 
  • 3 to 4 tablespoons maple syrup 


  1. In a large bowl, combine almond flour, oats, cashew butter, shredded carrot, shredded coconut, raisins, vanilla, cinnamon, ground ginger, salt, and a scoop of MegaFood® Daily Turmeric Nutrient Booster Powder™. 
  2. Stir until a cohesive dough forms, adjusting sweetness with maple syrup to taste. 
  3. Using a scooper, portion out the dough and roll into balls. 
  4. Refrigerate in a sealed container for up to 4 days, allowing the flavors to meld and intensify.
